Chocolate Coconut Pudding
1 Packaged pudding powder
1c/ Pet milk
3/4c. Water
1c. Shredded coconut
1tsp. Vanilla
Put pudding powder in a saucepan, stir in the milk and water. Bring to a boil, stir constantly. Cook and stir for 30 seconds. Remove from heat, and stir in vanilla. Rinse 4 custard cups or jello molds with cold water (See note). Fill the cups with pudding. Cover and chill until firm.
When ready to serve, turn out and serve. Cover with the coconut.
Variation: Use coffee in place of water. Or use other flavors of pudding powder.
Note: Rinsing with cold water helps pudding turn out of the cups better.
